The eggnog cookies that I posted the other day were just as good as I remembered! None of them actually received any icing on their cute little tops because they were snarfed up so quickly! And if you do ice them, I would recommend just a drizzle. The icing is great and beautiful and just as yummy as the cookies, but the cookies definitely don't need it for flavor!
But having the eggnog cookies reminded me of another recipe that I discovered last Christmas on Cookie Madness, and I've started a new craving. They taste a crazy lot like real butterfingers, but they don't stick in your teeth (James hates that) and they are what I would call sturdy, meaning, you don't have to eat them that day for them to taste good. So if you are making goody plates, you can make these a little in advance and they will still be great. You might want to keep them in the fridge though. Butterfinger Mounds
2 tablespoons butter
2 tablespoon granulated sugar
1/4 cup corn syrup
1/2 cup butterscotch chips
1/3 cup creamy peanut butter
1/2 teaspoon vanilla extract
2 cups corn flakes
Place butter, sugar and corn syrup in a medium sized microwave-safe bowl. Microwave on high for about 1 minute or until bubbly. Stir to dissolve sugar. Quickly stir in butterscotch chips and stir until chips are melted. Stir in peanut butter and vanilla and stir until smooth. Stir in corn flakes.
Drop by rounded tablespoons onto a waxed paper lined cookie sheet. Let sit until firm or chill until firm.
(You can drizzle them with melted chocolate or dip the tops to make them extra yummy!)

Just to let you know...you made my day and I am printing this recipe as we speak. A friend made these for me last Christmas and I ate them all by myself. There were some other goodies I let the rest of the fam have, but the eggnog ones were ALL MINE! She moved shortly after that and I never got the recipe from her - but these sound just like what she made. They are addicting! So thank you, seriously, from my soon-to-be-stopping-from-too-much-eggnog heart!
